Nutella mug brownie

Been trying all these mug brownie recipes recently, in order to find the perfect receipe, and I think this recipe is it.

The difference between this receipe and a previous failed recipe was that this recipe uses egg and milk. I found that not having egg and using water makes it dry, but adding egg alone with the water made it kueh like. Using both egg and milk produces the best result, and adding melted butter instead of oil was even better. The Nutella, surprisingly, makes all the difference, keeping the texture fudgey like.

It took me, on my microwave, 1 minute on high and 30 seconds on medium high to get a cake like texture. Probably reducing by 10 seconds on medium high would produce a more fudgey texture but I'm happy.

Microwave mug brownie Take 2

Since my first attempt here, I've found 2 new recipes and itching to try both. I didn't like using baking powder in lieu of the self-raising flour, so these 2 recipes are an improvement because they use neither.

Arguably, butter is going to taste much nicer than oil but there isn't any reason why I can't replace the oil with the butter. Other than that, the 2 recipes are largely similar except #2 adds cinnamon and #1 adds starts with wet and adds dry but #2 starts with dry and adds wet. Apparently, it's always better to mix both separately then add wet to dry to prevent it becoming a claggy, lumpy mess but that's more than 1 mug's work, so I'll settle for mixing dry, then creating a well in the centre and adding wet.

Oh and I need to use milk instead of water this time!

Updated 22 Feb 2015: Tried to combine the recipes by using melted butter and adding an egg to make it more spongy. It turned out strange, like eating kueh after a minute. Will probably not try adding the egg. Not very palatable.

Updated 23 Feb 2015: Tried the first recipe again in its entirety. Turned out so dry, I even had to add another tbsp of water to wet all the dry ingredients! After cooking in the microwave on high for 1 minute, it was ready but felt like eating sweet chocolate flour. Dry. Not trying again.

Microwaved Mug Brownie

2 minutes to prepare, 2 minutes to microwave!

Ingredients
1/4 cup (40g) self-raising flour
1/4 cup (60g) caster sugar
2 tbsp cocoa
2 tbsp vegetable oil
3 tbsp (60ml) water
1/2 tsp icing sugar (to sprinkle on top)
ice cream (optional)
Pinch of salt
1 tsp vanilla extract

Method
1. Add flour to the cup.
2. Add sugar to the cup.
3. Add cocoa to the cup.
4. Add oil to the cup.
5. Add water to the cup.
6. Mix all together until you have a smooth mixture.
7. Place into the microwave on high for 1 min 40 seconds.
8. Dust with a little icing sugar and EAT!

Review
I added 1 tsp of vanilla, pinch of salt, and used 1/4 cup flour with 1 tsp baking soda. The taste of the baking soda was quite obvious, so next time I really might have to use self-raising flour.

Next time, I might try using milk instead of water too.



Microwaved 1 minute on 100% power
: This results in a good fudgey texture, although the result isn't a very elegantly risen top. Instead, it was uneven in areas.

















Microwaved 1 min 10 seconds on 70% power
: The top is more evenly risen, and still fudgey, although I am a tiny bit concerned that the bottom may not be cooked through (using a skewer) so I thought I'd put it in for a bit longer.


















Microwaved 1 min 25 seconds on 70% power
: The look didn't change much, but it became much drier inside but was cooked all the way though time time.
: Perhaps a good compromise with the previous would thus be 1 min 20 seconds on 70% power.
: Will try more power settings next time.
